Processing: After sorting (by hand and floating), the cherries are de-pulped, fermented and washed. The coffee is then soaked again in fresh water to enhance the unmistakable taste of its origin. This is followed by a two-week drying period on raised beds specially designed to ensure a stable and even drying process
